The temps are dropping and many are busy with back to school and sports activities. Yep, it’s Fall, ya’ll and here is an and easy dinner for those cool evenings, when you need to get a meal on the table fast!
This has been a family favorite for many years. I hope that you enjoy it.
Quick and Easy Chili and Pumpkin Pie Parfait
Ingredients:
2 Cans of Chili Beans (Spicy or add 1 tblsp. of Chili Powder – or more to you liking)
2 Cans of Tomato Soup
1 lb. Ground Meat (Chuck, Round, or Turkey)
Extra of your choice:
Can of Whole Corn (Yellow of White Shoe-peg) – or Small bag of Frozen Corn
Canned Diced Tomatoes
Onions – chopped
Green Bell Peppers – chopped
Directions:
If you want to add onions and/or green bell peppers, you can saute them first, in a bit of butter and/or oil. If you are using ground beef, or chuck, just add the veggies to the meat as soon as you turn on the heat. Brown meat in large pot over medium heat. If there is a lot of fat in pot when the mean is cooked through, feel free to drain. Add beans and soup and any other extras that you wish to add. Heat until all ingredients are hot.
Serve over rice and top with shredded cheese. This is even better when served the next day! If you have picky eaters, it’s easy to split this recipe and make half with just the meat, beans and soup and the other half with any added ingredients.
The Pumpkin Pie Parfait is even faster to put together – simply take a slice of pumpkin pie (one for each person) and place in a large bowl. Mix until crust is broken into small pieces. Layer pie mixture and whipped cream or whipped topping.
For extra delicious whipped cream – make it from scratch with heavy shipping cream and liquid pumpkin spiced favor coffee creamer! First chill your beater in the freezer for an hour or two. Then chill your mixing bowl by swirling with few ice cubes and water – then dry. Add heavy a couple of cups of heavy cream, about 1/3 cup liquid coffee creamer, and some powdered sugar to taste. Whip on medium speed until well blended. Turn up mixer to high and beat until peaks form. Don’t over beat, unless you would like some pumpkin flavored butter:-)

I wish I had some of this chili today! It’s cold and fall like outside. The pumpkin parfait looks yummy! I am a huge pumpkin fan….just not in my coffee 😀 Thanks for sharing with us!
