I love having specific cocktails are certain times of year, and Valentine’s cocktails are some of my favourites. They’re always so delicate and colourful, either red or pink in hue and they’re usually delightfully fruity. One of my favourites is the Pink Cadillac Margarita, and that’s saying a lot because I hate tequila. A zingy blend of citrus flavours and cranberry, the drink is refreshing and packs as big of a punch as you want it to. It’s only got 5 ingredients and is really easy to put together, so I hope you enjoy the Pink Cadillac margarita this Valentine’s day.
Pink Cadillac Margarita
- 1 cup tequila
- 1 cup lime juice
- 1/2 of a cup of icing sugar
- 1/2 of a cup of your favourite orange liqueur
- 1/2 of a cup of red cranberry juice (sometimes I use strawberry juice, though…)
Mix everything together, and pour into a shaker filled with ice. Shake it up really well, then strain it into margarita or martini glasses and serve, nobody’s going to judge you on what kind of glass you use. My boyfriend likes a version where we replace the cranberry juice with raspberry juice, but my favourite has to be the original cranberry version. I like making batches of these ahead of time and letting them chill out in the fridge for when my boyfriend’s home and we can enjoy them together without having to fuss and starting measuring out ingredients when all we want to do is spend time together!
